Chocolate chip cookie sandwiches

Ingredients (12)

1 cup treacle sugar
1 cup white sugar
½ cup butter
2 eggs — large
2 Tbs vanilla
2½ cup flour
1 tsp Baking powder
1 tsp salt
2 cup dark chocolate — chips or chopped
ICING:
½ cup margarine
1 cup icing sugar
½ cup peanut butter

Method:

Preheat the oven to 175°C.

Mix together sugars and butter until smooth.

Add each egg and mix in and mix in the vanilla.

In a separate bowl mix together flour, baking powder and salt.

Slowly add the flour mixture to the sugar mixture until smooth.

Chop up chocolate into semi large chunks and mix in.

Roll into 24-26 small balls and press between your hands to about 1cm thick or a quarter of an inch.

Place onto baking tray and bake for 10 minutes or until a very light golden brown.

While they cool make the icing by adding the margarine, icing sugar and peanut butter to a bowl and mixing thoroughly until light and fluffy.

Spoon about 1 tbsp of icing onto a cookie and sandwich another cookie on top.
