Chocolate-chip chickpea biscuits

Ingredients (12)

1 cup brown sugar
180 ml butter
2 eggs — jumbo, whites only
2 tsp vanilla — essence
1 can chickpeas — pureed
1 cup dark chocolate — chips
180 ml walnuts
180 ml sultanas
2 cup self-raising flour
60 ml oats
5 ml Baking powder
2 ml sea salt and freshly ground black pepper

Method:

Preheat oven to 180°C. Cream together sugar and butter.

Beat in eggs and vanilla essence. Add chickpeas, chocolate chips, walnuts and sultanas and stir well to combine. Mix in remaining dry ingredients.

Shape batter into ping-pong-sized balls and place on a non-stick baking tray. Flatten each ball with a fork.

Bake for about 20-30 minutes or until crispy and cooked through.
