    brown sugar
  • 180

    butter
  • 2
    jumbo free-range egg whites
  • 2
    tsp
    vanilla essence
  • 1
    can
    chickpeas - puréed
  • 1
    cup
    dark chocolate chips
  • 180
    ml
    walnuts
  • 180
    ml
    sultanas
  • 2
    cup
    self-rising flour
  • 60
    ml
    oats
  • 5
    ml
    baking powder
  • 2
    ml
    sea salt and black pepper
 

Method

Preheat oven to 180°C. Cream together sugar and butter.

Beat in eggs and vanilla essence. Add chickpeas, chocolate chips, walnuts and sultanas and stir well to combine. Mix in remaining dry ingredients.

Shape batter into ping-pong-sized balls and place on a non-stick baking tray. Flatten each ball with a fork.

Bake for about 20-30 minutes or until crispy and cooked through.
