    bicarbonate of soda

    cocoa powder

    water

    oil
  • 12
    ml
    white vinegar
  • 5
    ml
    vanilla essence
  • 100
    g
    fruit and nut chocolate
  • 250
    g
    creamed cottage cheese
  • 1
    extra large egg
  • 75
    ml
    extra sugar
 

Method

 
Preheat the oven to 180 °C and grease a 20 cm square ovenproof dish with butter or non-stick spray.
Combine the flour, bicarbonate of soda, sugar, salt and cocoa powder and set aside.
Beat the water, oil vinegar and vanilla essence together and add to the dry ingredients.
Turn the batter into the prepared dish.
Halve the slab of chocolate. Break one half into squares and press them into the batter.
Mix the cottage cheese, egg and extra sugar and carefully spread on top of the batter,
Coarsely chop the other half of the chocolate and sprinkle on top of the cottage cheese topping.
Bake for 40 minutes or until a testing skewer inserted into the centre of the cake comes out clean.
Cool and serve.
