200.00 ml flour — cake
salt — pinch
5.00 ml Baking powder
1.00 ml Bicarbonate of soda
45.00 ml cocoa powder
1.00 eggs
40.00 ml oil
65.00 ml nescafé instant coffee granules — cold
70.00 ml water
3.00 ml liquid sweetener
5.00 ml vanilla — essence

Method:

Preheat the oven to 180 ºC and spray a shallow, round 20 cm cake tin with non-stick spray. Dust the cake tin with cake flour, shaking out any excess.
Sift the dry ingredients together. Beat the egg and oil together and beat in the remaining ingredients. Add the dry ingredients and beat until just blended. Turn the batter into the cake tin, spreading evenly.
Bake for about 15-20 minutes (check the cake after 15 minutes) until done. Cool in the cake tin before running a knife around the edge to loosen. Carefully turn out the cake on a wire rack (the cake breaks easily). Decorate as desired.
Recipe makes 1 small single-layer cake.
