Chocolate brownies with macadamias

Ingredients

  • 125 g butter
  • 45 g cocoa powder, sifted
  • 2 large eggs
  • 250 g castor sugar
  • 60 g self-raising flour, sifted
  • 100 g macadamia nuts (or nuts of your choice)
  • 85 g milk chocolate, roughly chopped
 

Method

Melt the butter in a saucepan over a low heat.
Stir in the sifted cocoa powder. Set aside.
Beat the eggs until light.
Gradually add the castor sugar, then stir in the chocolate mixture.
Fold in the flour, nuts and the milk chocolate.
Pour the mixture into a greased 20 cm square baking tin and bake at 180 °C for 25 to 30 minutes until just cooked through and still spongy to the touch.
Cool in the tin, then turn out and cut into squares.
