Chocolate bread and butter pudding

6.00 fruitcake — or raisin loaf
125.00 ml milk
500.00 ml cream — thick
125.00 ml castor sugar
100.00 g nestlé easymelt chocolate — dark, chopped
3.00 eggs — extra-large
1.00 chocolate
65.00 ml butter

Method:

Preheat oven to 160 ºC. Grease a 1 litre ovenproof dish or 4 individual ovenproof dessert bowls.

Spread butter on bread and cut bread into diagonal quarters. Arrange in dish or in bowls in a single layer, overlapping slices.

Combine milk, cream and sugar in a saucepan, stirring over low heat until sugar dissolves. Bring to the boil, then remove from heat.

Add chocolate and stir until melted. Cool slightly, then gradually whisk in eggs.

Pour half the custard mixture over the bread and stand for 10 minutes or until bread absorbs most of the liquid.

Pour over remaining custard mixture. Sprinkle with chocolate chips.

Bake for 40 – 45 minutes or until set and slightly puffed and golden.

Serve warm or cold, with cream or ice cream.
