Ingredients (6)

250.00 g butter
190.00 ml brown sugar
500.00 ml flour — cake, sifted
250.00 ml cocoa powder — sifted
FILLING
250.00 g dark chocolate
125.00 ml cream

Method:

Preheat oven to 180 ºC.
In a large mixing bowl, cream butter and sugar until well-blended. Stir in sifted flour and cocoa and shape dough into a ball.
Pinch off pieces of dough and roll into little balls. Place on a greased baking sheet and flatten each ball with the bottom of a cotton reel or the back of a fork.
Bake for 15 minutes. Remove from oven and cool on a wire rack.
FILLING: Place ingredients in a saucepan and stir over low heat until smooth. Refrigerate until firm.
TO ASSEMBLE: Sandwich biscuits together in twos, using a teaspoonful of filling. Serve with tea or coffee.
