Chocolate and raisin bread-and-butter pudding

    dark chocolate
  • 500
    ml
    cream
  • 60
    ml
    dark rum
  • 110
    g
    castor sugar
  • 75
    g
    butter
  • 5
    ml
    cinnamon
  • 3
    eggs
  • 9
    slices day-old white bread, quartered nd crusts removed
  • 125
    ml
    chocolate-coated raisins
  • thick cream, to serve
 

Method

30 to 35 minutes
 
Preheat the oven to 180 °C.
Combine the chocolate, cream, rum, sugar, butter and cinnamon in a heatproof bowl.
Place over a double boiler and stir until the chocolate has melted.
Whisk the eggs and pour into the chocolate mixture.
Spoon half of the mixture into a deep baking dish and arrange a layer of bread on top. Sprinkle with chocolate-covered raisins.
Pour over the rest of the mixture and follow with another layer of bread and chocolate-covered raisins.
Press down gently and leave to stand for two hours.
Place in the oven and bake for 30 to 35 minutes.
Serve warm with dollops of thick cream.
