Chocolate and coconut treats

    g
    butter
  • 200
    g
    brown sugar
  • 250
    g
    icing sugar
  • 60
    ml
    cocoa powder
  • 1
    large egg, lightly beaten
  • 200
    g
    tennis biscuits, broken into small pieces
  • 125
    ml
    desiccated coconut
 

Method

Place butter and brown sugar in a saucepan and heat over low heat until butter has melted. Simmer for 5 minutes, then remove from the heat. Sift together icing sugar and cocoa powder and stir into the butter mixture. Add egg, then stir in the biscuit pieces and half the coconut. Press mixture into a greased baking tray. Sprinkle with remaining coconut and press in. Refrigerate until firm, then cut into squares. Makes 25 slices.
