Method

Preheat the oven to 160°C.

Melt the chocolate and butter over simmering water or in the microwave oven on Medium (50% power) for 2 to 3 minutes. Stir in the sugar, vanilla essence and eggs. Mix well

In a separate bowl, sift the Horlicks, flour and cocoa powder, then add the nuts.

Add the dry ingredients to the chocolate mixture and stir well. Pour the mixture into a lined 28cm x 18cm pan.

Bake for 25-30 minutes. Leave in the pan to cool. Melt the extra dark chocolate and drizzle over the cooled brownies to decorate.
Alternatively you can dust the brownies with icing sugar

As a dessert option, serve warm with ice cream.

Tip of the day

Basic basil care
Basil wilts quickly, but will perk up when left in cool water for about 30 minutes. Then blot the leaves dry and store them at room temperature in a tightly sealed bag. If basil is stored in the refrigerator, it turns black.
