    mint chocolate, chopped
  • 250

    sugar

    vanilla essence

    extra-large eggs

    cake flour

    ml
    salt
 

Method

Preheat the oven to 180 ºC. Butter a 23 cm square cake tin, dust lightly with flour and shake out the excess. Melt the butter, dark chocolate and half the mint chocolate over low heat until smooth, stirring continuously. Remove from the stove and cool for 10 minutes. Stir in the sugar and vanilla essence and beat in the eggs one by one until the mixture is smooth and slightly shiny. Sift the flour and salt over the mixture and add the remaining mint chocolate. Stir until just blended and turn into the prepared tin. Bake for 25-30 minutes, remove from the oven and cool completely. Cut into squares with a sharp knife and serve. Makes 16 fairly large squares.
