Choc mocha brownies

    syrup

    cocoa powder

    brown sugar
  • 50

    dark sugar

    mocha flavoured double cream oghurt

    cake flour
  • 7
    ml
    bicarbonate of soda
  • TOPPING
  • 100
    g
    dark chocolate
  • 45
    ml
    fresh cream
  • 10
    ml
    butter
 

Method

 
1. Place the butter, syrup, chocolate, cocoa, brown sugar and half the yoghurt in a saucepan. Melt the chocolate and dissolve the sugar over medium heat. Do not allow mixture to boil. 2. Beat the eggs with the remaining half of the yoghurt. 3. Sift dry ingredients, add egg and yoghurt mixture and gradually beat in the hot mixture. Pour into buttered 35 cm x 25 cm roasting pan or large glass ovenproof dish. 4. Bake in preheated 160 ºC oven for 40 minutes. Remove from oven and allow to cool in the pan on a rack. TOPPING Place the chocolate in a bowl. Bring the cream and the butter to the boil and pour over the chocolate. Stir until smooth, if necessary warming over boiling water. Chill the ganache, without stirring until firm. Spread on cooled cake and cut into squares to serve. Makes 12.
