Ingredients (14)

FILLING
270.00 g dark chocolate — chopped
200.00 g sugar — granulated
75.00 g cornflour
4.00 ml salt
6.00 eggs — extra-large, yolks only
1.00 Litres milk
45.00 g butter — softened
vanilla — essence
CRUST
300.00 ml Marie biscuits — crushed
140.00 g butter — melted
65.00 g sugar — granulated
TO DECORATE
250.00 ml cream — fresh
20.00 ml sugar — granulated
dark chocolate — grated

Method:

1. Melt the chocolate in a bowl over barely simmering water. Stir well and remove from heat.
2. In a heavy-based saucepan, whisk together sugar, cornflour, salt and egg yolks. Gradually add the milk while whisking. Bring to the boil over a moderate heat, whisking to prevent lumps from forming. Simmer until thick.
3. Pass the custard through a fine sieve into a bowl. Whisk in the melted chocolate, butter and vanilla essence. Cover the top of the custard with cling film to prevent a skin from forming and chill for 6 hours.
4. CRUST: Preheat oven to 180 ºC. Stir together the crumbs, butter and sugar. Press into a 25 cm (1,5 litre) deep pie dish. Bake in the oven for 15 to 20 minutes, then cool.
5. Pour the well-chilled filling into the baked pie crust. Whisk the cream with the sugar and spoon decoratively on to the pie. Sprinkle grated chocolate on top.
(Note: This pie cannot be sliced; rather spoon out to serve.)
