Chinese-style poached chicken

    organic Basmati rice
  • 4
    Tbs
    grated ginger
  • 150
    ml
    shaoxing rice wine - or dry sherry
  • 500

    chicken stock
  • 60
    ml
    reduced-sodium soy sauce
  • 3
    garlic cloves - sliced
  • 1
    cinnamon stick
  • 2
    star anise
  • 6
    chicken breast fillets
  • 80
    g
    bok choi - or PnP Finest pak choi
  • 150
    g
    fresh shimeji mushrooms

Cook rice according to packet instructions and set aside.

Place ginger, rice wine, chicken stock, soy sauce, garlic, cinnamon and star anise in a nonstick pan and bring to the boil.

Add chicken breasts, reduce heat and simmer for 10-15 minutes or until just cooked through.

Add bok choi and mushrooms. Simmer for 30 seconds or until wilted. Serve with rice and broth.
