Chinese pork stir-fry with noodles

    fettuccine
  • 200
    g
    pork fillet, sliced into strips
  • salt and freshly ground black pepper
  • oil
  • 2
    cloves garlic, crushed
  • 2
    small red chillies, seeded and finely chopped
  • 3
    cm
    piece of fresh ginger, grated
  • 45
    ml
    soy sauce
  • 30
    ml
    hoisin (barbecue) or oyster sauce
  • 200
    g
    frozen prawns (optional)
  • 60
    ml
    bean sprouts
  • 3
    chives, finely chopped
  • shredded lettuce leaves and lemon slices (to garnish)
 

Method

 
Boil the noodles in sufficient salted water until tender. Drain and set aside. Season the pork with salt and pepper and fry in heated oil in a pan until just brown. Add the garlic, chilli and ginger and stir-fry for a few minutes. Add the soy sauce, hoisin sauce and prawns and heat until the prawns are just done. Add the noodles, bean sprouts and chives, mix and heat through. Serve immediately with shredded lettuce leaves and lemon slices. Serves 2.
