Ingredients (9)

50.00 ml peanut oil — or sunflower oil
4.00 chicken breast fillets — sliced
250.00 g button mushrooms — sliced
5.00 spring onion — chopped
15.00 ml garlic — cloves, crushed
15.00 ml fresh ginger — grated
300.00 g mixed vegetables — cubed
100.00 ml soy sauce
250.00 g pasta — capellini or Chinese noodles, cooked

Method:

Heat half the oil in a wok or large frying pan and fry the chicken pieces for two to three minutes until just cooked through.
Remove from the pan and set aside.
Heat the remaining oil and sauté the mushrooms for about three minutes.
Add the spring onions, garlic and ginger and stir-fry for one minute.
Add the remaining vegetables and cook until they are just tender.
Add the chicken, soya sauce and pasta and heat through.
Serve garnished with fresh coriander.
