    Chinese vermicelli (cellophane noodles)
  • 250
    g
    cooked chicken
  • 1
    cucumber
  • handful peanuts
  • handful coriander
  • Dressing
  • 2
    cloves garlic
  • 5
    ml
    minced ginger
  • 5
    ml
    minced chilli, optional
  • 30
    ml
    soy sauce
  • 15
    ml
    sesame oil
  • 15
    ml
    honey
  • 1
    orange, juice
 

Method

 
Soak and cook noodles according to packet instructions. Rinse with cold water and drain.
Toss noodles with chicken, cucumber, peanuts and coriander.
Mix dressing ingredients together and pour over noodle mixture.
Mix well to combine flavours.
