    self-raising flour
  • 120

    cake flour
  • 5
    ml
    baking powder
  • 120
    g
    castor sugar
  • 10
    ml
    grated nutmeg
  • 10
    g
    instant yeast
  • 2
    ml
    red food colouring
  • 150
    ml
    milk
  • sunflower oil for deep-frying
  • sugar for sprinkling
 

Method

 
Sift flours and baking powder together. Stir in sugar, nutmeg and yeast. Make a well in centre, stir in food colouring and enough milk to make a dough (add a little at a time). Set aside for 1 hour to rise. Heat oil (not too hot) in a frying pan. Fry a few teaspoonfuls at a time until golden and cooked through, turning once. Drain on absorbent paper. Sprinkle with sugar and serve. Makes 20-30, depending on size.
