Chilli pasta sauce

    Tbs
    olive oil
  • 1
    onion, finely chopped
  • 2
    red chillies, chopped
  • 3
    cloves garlic, chopped
  • 2
    can
    peeled and chopped tomatoes
  • 1 x 70g
    can
    tomato paste
  • 2
    tsp
    capers
  • 5 - 6
    anchovy fillets
  • 20
    black olives, pitted and chopped
  • 1/2
    cup
    red wine
 

Method

10 mins
 
Fry the chilli, garlic, anchovy and onion in the olive oil until the onion are soft.
Add the olives, capers, tomatoes, tomato paste and red wine, bring to the boil, reduce heat and simmer for anything between half an hour and an hour, the longer you simmer the sauce, the stronger the tomato flavor will be.

Serve on top of your favourite pasta.
