Chilli omelette

Ingredients

  • 15
    ml
    olive oil
  • 4
    large free-range eggs
  • 2
    ml
    dried chilli flakes
  • salt and milled pepper
  • sliced tomatoes
  • sliced cucumber
  • sliced feta cheese
  • fresh baguette, sliced
 

Method

6 minutes
 
Heat olive oil in a non-stick pan.
Beat eggs and add chilli flakes and seasoning.
Pour half the mixture into the pan and cook over a medium heat to set to a thin pancake style omelette.
Repeat for the second omelette.
Arrange on a plate with tomatoes, cucumber, feta and fresh baguette and serve immediately.
