Chilli mushroom salad

    fresh brown mushrooms, sliced
  • 150
    g
    fresh oyster mushrooms, quartered
  • 100
    g
    fresh button mushrooms, sliced
  • 45
    ml
    onion, finely chopped
  • 2
    cloves garlic, crushed
  • 25
    ml
    sugar
  • 10
    ml
    dried chilli
  • 15
    ml
    olive oil
  • 45
    ml
    lime or lemon juice
  • 30
    ml
    fish sauce
  • 250
    ml
    fresh mint leaves
  • Cos or butter lettuce leaves, washed
  • 2
    fresh red chillies
 

Method

4 minutes
 
Put mushrooms and onions in a wide saucepan. Add boiling water to cover. Simmer for four minutes and drain. Pound garlic, sugar and chilli to a paste. Add oil, lemon or lime juice and fish sauce, mixing well. Transfer the mushrooms to a bowl. Pour over dressing. Add mint leaves and gently toss everything together. Arrange the lettuce leaves on a platter and top with mushroom salad. Serve at room temperature, garnished with slices of fresh chilli.
