Heat the oil in a large, heavy-based saucepan over medium heat. Add the onion and garlic and cook for a couple of minutes until fragrant and softened.Add the chilli powder, cumin, coriander powder and sugar. Fry on low heat for 1 to 2 minutes.Add the bacon and beef mince and fry until the meat is browned.Add the tin of tomatoes, lime juice and cinnamon stick. Season the mixture with salt and pepper. Bring to the boil, reduce the heat and simmer slowly for 30 minutes.Add the tin of chilli baked beans and heat through.Serve on rice or with tacos or tortillas garnished with fresh coriander.Serves 4-6.Recipe reprinted with permission of Pink Polka Dot.
