Chilli con carne

    kg
    mince
  • 2
    large cloves garlic
  • 30
    ml
    chilli powder
  • 10
    ml
    sugar
  • 800
    g
    (2 cans) whole tomatoes
  • 125
    ml
    tomato sauce
  • 2
    ml
    ground cumin (optional)
  • 2
    ml
    ground coriander (optional)
  • 1
    fresh chilli, chopped (optional)
  • 3
    green peppers, thickly sliced
  • 410
    g
    (1 can) beans
 

Method

70 minutes
 
Sauté the onions in butter, remove from pan and set aside.
Brown the mince in butter, add the onions and garlic, and cook for five minutes.
Add chilli powder, sugar, tomatoes, tomato sauce, 250 ml water, salt and pepper.
Also add the cumin, coriander and fresh chilli if you are using them.
Cook slowly for 60 minutes, then add the green peppers. (Don't allow the dish to cook for too long after this, as the peppers will start to disintegrate.)
If the sauce is too thin, thicken with 15 ml flour mixed with 30 ml water.
Stir in beans just before serving.
Chilli con carne is delicious served with bread and beer.
