Chilli chicken with basil (Nua phad gra pao)

    chicken breast fillets, cut into strips

    red pepper, seeded and cut into strips

    green pepper, seeded and cut into strips

    water

    fish sauce
  • 5
    ml
    light soy sauce
  • 5
    ml
    Golden mountain sauce
  • 15
    ml
    oyster sauce
  • 5
    ml
    dark soy sauce
  • 5
    ml
    white sugar
  • 10
    fresh basil leaves
 

Method

 
Heat the oil in a wok. Sauté the chillies and garlic until fragrant. Add the chicken, green beans, carrot, and green and red peppers and stir-fry lightly. Add water as required. Add the fish sauce and light soy sauce, Golden Mountain sauce, oyster sauce, dark soy sauce and sugar. Stir-fry for about 1 minute or until the chicken is done. Add the basil leaves just before serving. Serve in a deep plate garnished with basil leaves.
