Chilli beef with oyster sauce

    ml
    dry sherry
  • 30
    ml
    oyster sauce
  • 15
    ml
    soy sauce
  • 5
    ml
    sugar
  • 5
    ml
    cornflour (cake flour will also do fine)
  • 15
    ml
    peanut or canola oil
  • 500
    g
    beef fillet, or sirloin
  • 2
    red chillies
  • 2
    fat cloves garlic
  • 250
    g
    fresh black mushrooms
  • spring onion and sliced chilli to serve
 

Method

 
Mix the first five ingredients together in a small bowl ensuring that the cornflour is well mixed and not lumpy.
Heat oil in a large wok or frying pan until smoking.
Add beef and stir-fry over high heat for about a minute.
Add remaining ingredients and stir-fry over high heat until cooked through, about 4 minutes.
Top with finely sliced chilli and/or spring onion and serve immediately with steamed rice and just cooked bunches of pak choi.
