Chilli beef 'n beans

    rump steak, cubed

    olive oil

    onion, chopped
  • 3
    cloves garlic, chopped
  • 2
    red chillies, chopped
  • 1
    red or yellow pepper, sliced into strips

    x 400 g can red kidney beans
  • 4
    large ripe tomatoes, blanched, skinned and chopped

    tomato puree

    chilli sauce
  • 250
    beef stock
  • salt and pepper


15 minutes
Heat olive oil and sauté onion, garlic and chillies for two minutes.
Add peppers and paprika and sauté for three minutes.
Add kidney beans, tomatoes and tomato purée, chilli sauce and stock.
Simmer for five minutes to heat through and slightly thicken.
Meanwhile, cook steak in a smoking hot griddle pan to desired doneness.
Allow to rest for five minutes and cut into cubes.
Toss meat into sauce and serve with warm tortillas and a dollop of yoghurt.
