Chilli bean hot-pot

    peanut oil
  • 8
    sausages of your choice
  • 1
    onion
  • 2
    cloves garlic
  • 2
    green chillies
  • 5
    ml
    crushed dried chillies
  • 5
    ml
    freshly grated ginger
  • 2
    potatoes
  • 4
    carrots
  • 300
    ml
    vegetable stock
  • 15
    ml
    soy sauce
  • 410
    g
    baked beans
  • salt and freshly ground black pepper
  • 45
    ml
    chopped fresh coriander, plus extra leaves to garnish
 

Method

30 minutes
 
Heat oil in a large saucepan and fry sausages until browned. Remove from saucepan and set aside.
Sauté the onion, garlic, chillies and ginger until the onion has softened.
Add potatoes and carrots and cook for a further 3 minutes.
Add vegetable stock and soy sauce and bring to the boil, then turn down the heat and simmer for 8 to 10 minutes until vegetables are just tender.
Stir in baked beans, seasoning and fresh coriander.
Simmer for 5 minutes.
Garnish with fresh coriander leaves and serve.
