Ingredients (10)

1.00 kg onion
5.00 green chilli
5.00 garlic — cloves, crushed
125.00 ml oil
800.00 g tomatoes — peeled
25.00 ml vinegar — grape
25.00 ml soy sauce
40.00 ml jam — smooth, apricot
50.00 ml fresh parsley — chopped
125.00 ml mayonnaise

Method:

Slice the onions into rings.
Seed the chillies and chop finely.
Sauté the onions, chillies and garlic in the oil until soft.
Dice the tomatoes and add to the onion mixture.
Reduce the heat, add the remaining ingredients and mix.
Simmer to 30 to 45 minutes or until the mixture is no longer watery.
Cool before turning into clean bottles. Store in the fridge.
Makes about 1 litre.
