Chilli and tomato sauce

    onions
  • 5
    green chillies
  • 5
    cloves garlic, crushed
  • 125
    ml
    oil
  • 800
    g
    ripe tomatoes, skinned
  • 25
    ml
    grape vinegar
  • 25
    ml
    soy sauce
  • 40
    ml
    smooth apricot jam
  • 50
    ml
    finely chopped parsley
  • 125
    ml
    mayonnaise
 

Method

 
Slice the onions into rings. Seed the chillies and chop finely. Sauté the onions, chillies and garlic in the oil until soft. Dice the tomatoes and add to the onion mixture. Reduce the heat, add the remaining ingredients and mix. Simmer to 30 to 45 minutes or until the mixture is no longer watery. Cool before turning into clean bottles. Store in the fridge. Makes about 1 litre.
