Ingredients (10)

2.00 spring onions — coarsely chopped
1.00 peppers — red or green, chopped
15.00 ml garlic — cloves, crushed
30.00 ml brown sugar
1.00 kg tomatoes — quartered
45.00 ml fresh basil
250.00 ml Buttermilk — low fat, cultured
180.00 ml stock — vegetable or chicken
12.00 parsley sprigs — large
freshly ground black pepper — to taste

Method:

Place all ingredients in a food processor and blend until smooth.
Season to taste, then pour into a large soup bowl.
Chill well before serving.
