Chilled tomato soup

    ml
    chilled tomato juice
  • 30
    ml
    lemon juice
  • 3
    ml
    Worcestershire sauce
  • 10
    ml
    sugar
  • 2
    cloves garlic, crushed
  • salt and freshly ground black pepper
  • 250
    g
    tomatoes, skinned and chopped
  • 1
    small onion, grated
  • 1
    small cucumber, seeded and chopped finely
  • chopped parsley
 

Method

 
Mix all ingredients except parsley, and mash or press through a sieve. Cover the bowl and chill. Sprinkle with parsley just before serving.
