Chilled melon and cucumber soup

  • 1 and 1/2
    large English cucumbers
  • 250
    ml
    winter melon cubes
  • 500
    ml
    Bulgarian yoghurt
  • 500
    ml
    vegetable or chicken stock
  • 125
    ml
    fresh mint leaves
  • salt and pepper to taste
  • crusty bread to serve
 

Method

 
Blend all ingredients except the bread.
Chill for a few hours or overnight and serve with crusty bread.
