Chilled cucumber soup with coriander

    English cucumbers, peeled and chopped
  • 500
    ml
    natural yoghurt
  • 5
    ml
    ground coriander
  • 10
    ml
    lemon juice
  • 15
    ml
    chopped parsley
  • 5
    ml
    chopped mint (or more to taste)
  • English cucumber, diced, to garnish
  • CORIANDER OIL
  • handful coriander, washed and dried
  • 125
    ml
    olive oil
 

Method

 
CORIANDER OIL: Place coriander and olive oil in a blender and purée until very smooth. Set aside. SOUP: Purée cucumbers and yoghurt in a blender until smooth. Add remaining ingredients, except garnish, and blend until combined. Chill. Serve soup drizzled with coriander oil and diced cucumber.
