Chilled cucumber and yoghurt soup

    English cucumbers, chopped and seeded
  • 500
    ml
    water
  • 500
    ml
    natural yoghurt
  • 10
    ml
    honey
  • salt and milled pepper
  • fresh dill, basil or chives, chopped
 

Method

 
Purée cucumber, water, yoghurt, honey and seasoning together. Stir in your choice of herb - all three may be used, if desired. Chill well and serve with crusty rye or wholewheat bread. TOTAL KILOJOULE COUNT: 2 320 kJ (560 Cal). A portion: 580 kJ (140 Cal).
