Chilled berry soup

    raspberries, fresh or frozen

    g
    blackberries, fresh or frozen
  • 65
    ml
    sweet wine
  • 500
    ml
    water
  • berries to garnish
  • 1
    croissant, toasted
  • 250
    ml
    low fat natural yoghurt
 

Method

 
Preheat oven to 180 ºC. Place berries and sweet wine in an ovenproof bowl and bake for 40 minutes, or until berries release their juices. Add water, bring to boil and simmer for 5 minutes. Purée until smooth. Refrigerate until well chilled. Spoon into 4 bowls and serve, decorated with a few extra berries, a quarter of the toasted croissant and a dollop of yoghurt.
