Chicory with cheese sauce

Ingredients (8)

8.00 chicory — heads
8.00 ham — slices
25.00 g butter
10.00 g flour
250.00 ml milk
50.00 g gruyère cheese — grated
15.00 ml breadcrumbs
nutmeg — ground

Method:

Remove any faded leaves and cut off a thin slice from the bottom of the chicory heads. Wash and boil gently until tender (about 20 minutes). Drain. Wrap a slice of ham around each head and lay in a greased baking dish. Melt butter in a saucepan, add flour and cook, stirring to form a roux. Add milk, stirring, and bring to boil. Season and add cheese, saving a little for the topping. Pour over chicory. Sprinkle over remaining cheese, breadcrumbs and nutmeg and pop under grill to brown.
Serves 4.
