Chicory with cheese sauce

    chicory heads
  • 8
    slices ham
  • 25
    g
    butter
  • 10
    g
    flour
  • 250
    ml
    milk
  • 50
    g
    Gruyère cheese, grated
  • 15
    ml
    breadcrumbs
  • nutmeg
 

Method

Remove any faded leaves and cut off a thin slice from the bottom of the chicory heads. Wash and boil gently until tender (about 20 minutes). Drain. Wrap a slice of ham around each head and lay in a greased baking dish. Melt butter in a saucepan, add flour and cook, stirring to form a roux. Add milk, stirring, and bring to boil. Season and add cheese, saving a little for the topping. Pour over chicory. Sprinkle over remaining cheese, breadcrumbs and nutmeg and pop under grill to brown. Serves 4.
