Chickpea, feta and mixed greens salad

    chickpeas, cans, drained and rinsed
  • 750
    ml
    baby spinach
  • 125
    ml
    soft herbs-basil, Italia parsley, chives, all roughly chopped
  • 250
    ml
    reduced-fat feta
  • 60
    ml
    verjuice
  • 30
    ml
    fresh lemon juice
  • 60
    ml
    olive oil
  • 30
    ml
    water
  • 7
    ml
    wholegrain mustard
  • 1
    fat garlic clove, crushed
 

Method

 

Toss chickpeas, spinach and roughly chopped herbs into a bowl.
Break feta into bite-sized chunks and add to bowl.
Whisk vinaigrette ingredients together, pour into salad and mix well.
