Chicken with sherry mayonnaise

    wine vinegar

    ground cumin seed, garam masala or curry powder

    paprika
  • 10
    ml
    salt

    cloves garlic, crushed

    chicken wings, tips removed, or drumsticks
  • 125
    ml
    finely chopped chives
 

Method

 
Blend the oil, vinegar, cumin seed, paprika, salt and garlic, beating well. Place the wings in the mixture, coat well and marinate for 1-8 hours in the fridge. Preheat the oven to 220 ºC (425 ºF). Arrange the chicken wings in a single layer in an oven-roasting dish. Spoon the marinade over and roast for 30-35 minutes, turning the wings after 20 minutes. Arrange the wings on a serving platter, garnish with chives and serve with sherry mustard. Makes 24 portions.
