75.00 ml oil
125.00 ml vinegar — wine
50.00 ml cumin — garam masala or curry powder
15.00 ml paprika
10.00 ml salt
4.00 garlic — cloves, crushed
24.00 chicken — wings
125.00 ml fresh chives — finely chopped

Method:

Blend the oil, vinegar, cumin seed, paprika, salt and garlic, beating well. Place the wings in the mixture, coat well and marinate for 1-8 hours in the fridge. Preheat the oven to 220 ºC (425 ºF). Arrange the chicken wings in a single layer in an oven-roasting dish. Spoon the marinade over and roast for 30-35 minutes, turning the wings after 20 minutes. Arrange the wings on a serving platter, garnish with chives and serve with sherry mustard.
