Ingredients (9)

1.00 chicken — whole
salt and freshly ground black pepper — to taste
125.00 g prunes — stoned
450.00 ml strong rooibos tea — healed
1.00 onion — chopped
oil
100.00 g button mushrooms — sliced
15.00 ml fresh parsley — chopped
lemon — halved, zest and juice

Method:

Preheat the oven to 180 ºC (350 ºF).
Clean the chicken well and season with salt and black pepper on the inside.
Soak the prunes in the rooibos tea for at least an hour before chopping finely. Sauté the onion in a little heated oil till soft. Add the mushrooms and stir-fry till pale brown. Add the parsley, juice and rind of the lemon as well as the chopped prunes and cool completely. Stuff the chicken with the mixture and truss the bird with string. Season to taste with salt and pepper an the outside and place in an ovenproof dish. Pour over a little of the rooibos tea, cover and bake for about one and a half hours or till the chicken is done. Remove the lid 20 minutes before the end of the cooking time to allow the chicken to brown. Serve with vegetables, extra prunes and fried mushrooms.
