Chicken with pine nuts and raisins

    olive oil

    cloves
    whole, peeled garlic cloves

    chicken strips
  • 5

    salt and pepper to season

    pale, dry sherry
  • 70

    soaked raisins
  • 200
    ml
    Water (to soak raisins)
  • 50
    g
    toasted pine nuts, almonds or hazelnuts

Heat olive oil in a large pan over medium heat, until hot. Add garlic cloves; fry until golden, then remove and set aside. Season the chicken strips well and add to the pan. Cook over high heat to seal. Add dry sherry, soaked raisins*, toasted pine nuts, almonds or hazelnuts, and gently simmer to cook chicken. Season with salt and pepper and serve at room temperature. *Soak raisins in warm water for about 20 minutes to plump.
