45.00 ml fresh chillies — 573
8.00 cloves garlic — cloves
200.00 g chicken — strips
5.00 ml sea salt and freshly ground black pepper
125.00 ml sherry — pale, dry
70.00 g raisins — soaked
200.00 ml water
50.00 g pine nuts — toasted

Method:

Heat olive oil in a large pan over medium heat, until hot. Add garlic cloves; fry until golden, then remove and set aside. Season the chicken strips well and add to the pan. Cook over high heat to seal. Add dry sherry, soaked raisins*, toasted pine nuts, almonds or hazelnuts, and gently simmer to cook chicken. Season with salt and pepper and serve at room temperature. *Soak raisins in warm water for about 20 minutes to plump.
