Chicken with pimiento and orange

  • SALAD DRESSING
  • 400
    g
    pimientos in water, drained and diced
  • 1
    onion, sliced
  • 2
    oranges, thickly skinned and cut into segments
  • 10
    ml
    black peppercorns, crushed or ground
  • 15
    ml
    balsamic vinegar
  • 30
    ml
    olive oil
  • OTHER
  • 4
    chicken breasts
  • salt
 

Method

 
Blend all the ingredients for the salad dressing in the bowl and set aside. Season the chicken pieces with salt and fry in a little oil in a heated pan until brown on both sides. Heat until done but still juicy. Serve with the dressing. Serves 3.
