Chicken with broccoli and cheese

    whole chicken, cooked and meat removed from the bones
  • 250
    ml
    uncooked rice
  • 15
    ml
    lemon juice
  • 250
    ml
    mayonnaise
  • 5
    ml
    curry powder
  • 500
    g
    broccoli, broken into florets
  • 4
    extra-large eggs, whisked
  • 125
    ml
    breadcrumbs
  • Salt and pepper
  • 250
    ml
    grated cheese
 

Method

 
Preheat the oven to 180 ºC (350ºF). Boil the rice in salted water until tender. Drain well and spoon into bottom of an ovenproof dish. Arrange the chicken pieces on top of the rice with broccoli florets in between. Mix the mayonnaise, eggs, lemon juice and curry powder, season with salt and pepper to taste and pour over the chicken in the dish. Combine the cheese and breadcrumbs and sprinkle on top. Bake for about 30 minutes or until the egg mixture has set and the cheese has melted. Serve with a salad. Serves 6.
