Chicken tikka salad with pea noodles (slangetjies)

    chicken breasts, with skin, cut into small pieces
  • 2
    large tomatoes, chopped
  • 250
    g
    pea noodles (or slangetjies, from street vendors)
  • mint raita (see recipe)
  • 20
    ml
    mint jelly
  • MARINADE
  • 5
    ml
    salt
  • 5
    ml
    chilli powder
  • 5
    ml
    crushed garlic
  • 5
    ml
    grated ginger
  • 15
    ml
    lemon juice
  • 30
    ml
    natural yoghurt
  • 250
    ml
    chopped coriander
  • 15
    ml
    sunflower oil
 

Method

 
Mix marinade ingredients and stir in chicken pieces. Marinate for about 3 hours. Preheat oven to 200 ºC. Place chicken in an ovenproof dish and bake for 15 to 20 minutes, turning pieces often. Divide chicken among 4 plates and garnish with chopped tomatoes, pea noodles and mint raita. Top with a teaspoonful of mint jelly.
