Ingredients (14)

1.00 kg chicken — pieces
30.00 ml oil
3.00 potatoes — medium
1.00 water
215.00 g baked beans — tinned
1.00 soup powder — chicken
60.00 ml water
2.00 ml mixed spice — ground
1.00 ml freshly ground black pepper
5.00 ml garlic — salt
2.00 ml dried mixed herbs
15.00 ml sugar
15.00 ml vinegar
5.00 ml brandy

Method:

Remove the skin and excess fat from the chicken portions. Heat the oil in a heavy saucepan and brown the chicken pieces on all sides. Cut the potatoes in four and add with the water to the saucepan. Cover and simmer until the potatoes are half done. Add the baked beans and reduce the heat to low. Mix soup powder with water to make a paste then add the spices, sugar, vinegar and brandy. Pour the paste over the stew, stir in and simmer covered for 30 minutes or until the chicken and potatoes are cooked. Serve with rice or bread.
