Chicken skewers with chilli mint soba noodles (wheat-free)

Ingredients (10)

30 ml sunflower oil
30 ml soy sauce
30 ml lemon juice — or fresh lime juice
50 ml fresh mint — and coriander, chopped
5-10 ml fresh chillies — chopped
2 garlic — cloves, crushed
500 g chicken — thighs, halved
noodles — soba
15 ml sesame seeds — toasted
asparagus — steamed to serve

Method:

Mix the sunflower oil, soy sauce, lime juice and 30ml of the mint and coriander together. Add the chilli and garlic. Pour over the chicken pieces and set aside to marinate for 20 minutes or longer.

Thread the chicken onto wooden kebab sticks. Grill on a griddle pan or over coals on a fire until they are cooked. Baste with any leftover marinade.

Cook the noodles in water or in chicken stock. Drain and stir in the remaining herbs, a little soy sauce and the sesame seeds. Serve with the chicken skewers with steamed asparagus or other green vegetables on the side.
