Chicken satay kebabs

Ingredients

  • MARINADE
  • 2
    red chillies, seeded and chopped
  • 1
    medium onion, skinned and grated
  • 30
    ml
    fresh ginger, peeled and grated
  • 45
    ml
    honey
  • 30
    ml
    soy sauce
  • 30
    ml
    oil
  • 4
    large, skinless chicken breasts, sliced lengthways
 

Method

8 minutes
 
Combine marinade ingredients in a glass bowl. Thread slices of chicken onto sticks and place in a wide, shallow container. Pour over marinade and marinate for at least two hours, or preferably overnight. Place satays on a greased baking tray and grill under a preheated grill for six to eight minutes, turning to expose all sides to the grill, or grill over coals.
