Chicken salad

    head lettuce, rinsed and shredded
  • 125

    fresh button mushrooms, wiped clean and sliced
  • 2
    spring onions, chopped
  • 1
    cucumber, sliced into thin rings
  • 1
    tomato, cut into wedges (optional)
  • 3
    large carrots, scraped and cut into thin strips
  • 300
    g
    frozen peas, defrosted
  • 500
    g
    cooked chicken, cut into strips
  • DRESSING
  • 500
    ml
    mayonnaise
  • 10
    ml
    mild curry powder
  • 1
    clove garlic, crushed
 

Method

 
Mix the salad ingredients lightly and transfer to a salad bowl. Blend the ingredients for the dressing and pour over. Chill overnight and mix just before serving. Serves 6.
