  • 4
    chicken breast fillets, skinned, deboned and diced
  • salt and freshly ground black pepper
  • oil
  • 50
    ml
    mayonnaise
  • 50
    ml
    plain yoghurt
  • 50
    ml
    sour cream
  • 5
    ml
    Dijon mustard
  • 1
    lemon, rind only
  • 1
    ml
    dried tarragon
  • 125
    g
    seedless grapes (optional)
  • assorted lettuce leaves
 

Method

 
Season the diced chicken with salt and pepper to taste and fry in a little oil until golden brown. Blend the mayonnaise, plain yoghurt, sour cream, mustard, lemon rind and tarragon. Add the chicken and mix. Season to taste with salt and black pepper. Add the grapes and mix. Chill until just before serving. Spoon onto salad plates and decorate with lettuce leaves. Serves 3-4.
