Chicken roll with dried fruit

    whole chicken
  • salt and pepper
  • FILLING
  • 150
    g
    chicken fillet, finely chopped
  • 2
    ml
    sea salt
  • 2
    ml
    fresh mixed herbs
  • 1
    large clove garlic, crushed
  • 1
    peel of a naartjie, grated
  • 2
    eggs, beaten
  • 80
    ml
    cream
  • 25
    ml
    sugar
  • 250
    g
    peaches boiled until soft with naartjie peel with sugar
 

Method

Preheat the oven to 160 ºC. Debone only the breast cavity with the breast facing up and cut through the breast bone. Press open and cut along the side of the ribs to remove. Season with salt and pepper to taste. Mix all the ingredients for the filling, except the peaches, in a food processor and process. Spread on the inside of the chicken cavity and arrange the peaches on top. Secure the opening with cocktail sticks and bake for about 1 hour or until the chicken is done and brown on the outside. Serve with aniseed rice, orange-honey sweet potatoes and spinach loaf. Serves 4-6.
