Chicken prawn and coconut soup

    coconut milk
  • 300
    ml
    chicken stock
  • 350
    g
    chicken breast fillets, slice thinly
  • 2
    lemongrass stems, cleaned and bruised
  • 1
    piece fresh ginger, julienned
  • 250
    g
    shelled prawns
  • 1
    red chilli, seeded and sliced
  • 4
    spring onions, shopped
  • 1
    lime, juice
 

Method

15 minutes
 
Heat the coconut milk and stock. Bring to the boil. Add the chicken, lemongrass, ginger and simmer for 10 minutes. Add the prawns and cook for further 2 minutes. Add the remaining ingredients and serve immediately.
