Chicken pilaf

    oil

    chicken breasts, diced
  • 125

    chicken stock
  • 15

    soy sauce
  • 30

    sherry
  • 1
    onion, chopped
  • 1
    clove garlic, crushed
  • 2
    carrots, julienned
  • 2
    stalks celery, sliced
  • 4
    chives, chopped
  • 1
    red pepper, sliced
  • 750
    ml
    cooked rice
  • 1
    grated rind of an orange
  • 2
    rounds feta cheese
  • 30
    ml
    chopped fresh coriander
 

Method

 
Heat half the oil in a large pan and fry the chicken pieces until lightly browned. Remove from the pan and add the stock, soy sauce and sherry to the chicken. Heat the remaining oil and stir-fry the onion and garlic until tender. Add the carrots and fry for another minute. Add the remaining vegetables and stir-fry until done but still firm. Add the rice, chicken mixture and orange rind and heat. Crumble the cheese on top just before serving and stir in lightly. Sprinkle with coriander leaves if desired and serve hot. Serves 4-6.
