Ingredients (15)

65.00 ml oil
500.00 g chicken breast fillets — chopped
125.00 ml stock — chicken
15.00 ml soy sauce
30.00 ml sherry
1.00 onion — chopped
1.00 garlic — cloves, crushed
2.00 carrots — julienned
2.00 celery stalks — sliced
4.00 fresh chives — chopped
1.00 red pepper — sliced
750.00 ml rice — cooked
1.00 orange — zest only
2.00 feta cheese — rounds
30.00 ml fresh coriander — chopped

Method:

Heat half the oil in a large pan and fry the chicken pieces until lightly browned. Remove from the pan and add the stock, soy sauce and sherry to the chicken.
Heat the remaining oil and stir-fry the onion and garlic until tender. Add the carrots and fry for another minute. Add the remaining vegetables and stir-fry until done but still firm.
Add the rice, chicken mixture and orange rind and heat. Crumble the cheese on top just before serving and stir in lightly. Sprinkle with coriander leaves if desired and serve hot.
Serves 4-6.
